Broccoli Mac: Macaroni Casserole

This macaroni casserole is a hearty dish has been a go-to when I need a dinner plan for a couple of nights, and either don’t know what to make, or can’t find as many fresh ingredients in the middle of winter. It’s comfort food for sure, but with the addition of lean protein and green vegetables, it’s also nutritious.

Serves 6

Ingredients

Roasted broccoli (about 4 heads)

2 6-oz. boxes of quick Mac & Cheese (plus milk or butter as the package suggests)

1 package pre-cooked chicken or vegan sausage

Extra cheese, either cheddar or Parmesan – optional

Breadcrumbs – optional

Instructions

Roughly chop the broccoli and douse with oil and salt, then roast in the oven for about 30 minutes. Leave the oven on.

Meanwhile, make the mac & cheese according to the package directions. Slice the sausages.

Spray a 13-inch lasagna pan with cooking oil. Toss the broccoli, mac and cheese, and sausage to combine, and layer all together in the pan (if you’re careful you can toss them in the pan but do it gently). Top with an extra sprinkle of cheese and breadcrumbs, then bake for 20-30 minutes until hot and bubbly.
